Toon Shrimp Cold Noodle Recipe

Ingredients for Toon Shrimp Cold Noodle: Flour 600g, Sweet Potato Starch 1 tablespoon, Salt 1 teaspoon, Water 1250g, Toon 1 bunch, Spinach 1 bunch, Garlic 5 cloves, Cucumber 2, Tomato 2.
Method for Toon Shrimp Cold Noodle: Step 1: Combine 600g flour, 1 teaspoon salt, 1 tablespoon sweet potato starch, and 800g water to form a thick batter. Stir in one direction until there are no lumps, then let it rest for about 20 minutes before stirring again. Repeat this process to ensure a smooth batter.


Step 2: Gradually add the remaining water, still stirring in the same direction, to thin out the batter.


Step 3: Brush a thin layer of cooked oil on the cold noodle mold, pour in the batter, and steam until large bubbles appear. Remove, cool on cold water, brush with cooked oil, peel off, and place upside down on a large plate, brushing oil on the other side.


Step 4: Prepared cold noodles.


Step 5: Toon.

Step 7: Blanch the toon sprouts in boiling water.


Step 8: Blanch the spinach picked from the garden.


Step 9: Chop into smaller pieces.


Step 10: Add shredded cucumber, toon, spinach, and stir-fried tomato sauce, spicy oil.
