Ingredients for Sour Bean and Minced Pork Rice Noodle Salad: Rice noodles 500g, sour beans 150g, minced pork 100g, garlic cloves 2, spring onions 2, red chili peppers 2, rapeseed oil as needed, dark soy sauce 1 tablespoon, soy sauce 3 tablespoons, salt as needed, sugar a pinch, chili oil 1 tablespoon, sesame oil 1 tablespoon, sesame paste 1 tablespoon.
Method: Step 1 – Finely chop the sour beans, red chili peppers, garlic, and spring onions, and prepare the minced pork. Boil the dry rice noodles until they break easily when picked up with chopsticks, then drain and rinse under cold water, set aside.
Step 2 – Heat a pan with oil until it starts to smoke, then add garlic and chili pepper pieces, stir-fry until fragrant.
Step 3 – Add sour beans and stir-fry until they are cooked through.
Step 4 – Pour in the minced pork and stir-fry until it changes color.
Step 5 – Remove the cooked sour beans and minced pork from the pan and set aside.
Step 6 – Combine all the ingredients from the seasonings in a bowl, mixing them evenly.
Step 7 – Pour the drained rice noodles into the seasoning bowl and mix until evenly coated with the sauce. Serve in a dish, top with the sour bean and minced pork mixture, and mix well before eating. This dish is tangy and refreshing, a great choice to revive your appetite!
